Overloaded with ripe bananas and no time to eat them? Not to worry, here is a very basic and very easy recipe that take all at 5 minutes to whisk together. An hour of waiting, while your house fills with tempting aromas and then you’ll be snacking on your very own slice of refined-sugar free, gluten-free, freshly baked banana bread. Healthy and delicious to get a load of potassium and energy to go about your day. Best of all is that the natural sugars in the bananas will fool kids and everyone into thinking they are having a load of sugar. Instead they will be loading up with nutrition and they will love it! ⁣
Ingredients:⁣
bananas ⁣
1 cup honey ⁣
3 eggs⁣
1 Tbsp Olive oil ⁣
1 Tbsp Cashew butter ⁣
3/4 cup almond flour ⁣
10 Tbsp organic oats ⁣
1 teaspoon baking powder ⁣
1/2 teaspoon cinnamon ⁣
1/2 teaspoon salt⁣
1/2 cup pumpkin seeds (optional)⁣
1/2 cup flax seeds (optional)⁣
1/2 cup chocolate chunks ( we love using Hu) or any chocolate chips you like⁣
Preparation:⁣
Heat the oven to 350F. Line loaf pan with parchment paper, letting the excess hang over the long sides. Spray the inside with cooking spray.⁣
Peel bananas and add them to the bowl. Using the fork, mash it, leave the bananas as chunky or as smooth as you prefer. Add eggs and beat it well. Pour honey, oil, and cashew butter into the mixture. Measure the almond flour, oats, baking soda and salt. Give a quick stir to incorporate dry ingredients.⁣
Combine dry and wet ingredients, mix well. Add chocolate, pumpkin and flax seeds, mix well.⁣
Pour the mixture into the loaf pan, sprinkle extra pumpkin seeds over the batter and place into the oven. ⁣
Bake in the preheated oven until a toothpick inserted in the center of the bread come out clean, about 1 hour.⁣
Cool in the pan for 15 minutes, then remove from the pan, and allow to cool completely on a wire rack.
