Easy, nutritious whole foods plant based cookies. Made with moringa, pumpkin, oatmeal, amongst other gluten free, vegan ingredients. Oil free, nut free and soy free. Super tasty and not sweet so perfect for a breakfast cookie on the go.

Original recipe inspiration (I changed a few things):

My recipe:
1/2 cup pumpkin puree
1 cup rolled oats
1/4 cup maple syrup
1 tsp baking powder
1/4 cup raw cacao nibs
1 tsp Rootalive Ceylon Cinnamon
1/4 tsp nutmeg
1/4 tsp sea salt
1 tsp pure vanilla extract
1/4 cup chia seeds
1/2 cup shredded coconut
1/4 cup tahini
2 tbsp Rootalive Moringa

Optional: pumpkin seeds and chopped up dried cranberries for the top

In a blender or food processor, add oats, coconut and chia seeds. Pulse until incorporated. Then add into a bowl with all other ingredients.

Roll with your hands into balls and put on a parchment lined baking sheet. Bake in oven at 350F for 12-15 minutes until bottom is slightly golden.

My batch made 23 cookies.
